Did everyone have a wonderful Thanksgiving holiday? Hope you got some extra rest over the long weekend! I typically travel for Thanksgiving, but this is the first Thanksgiving {I think in my entire life} that I have not traveled! I prepared a simple Thanksgiving dinner for 4 in my home kitchen, and spent the weekend relaxing at home and decorating for Christmas. Marshall and I capitalized on the Black Friday deals at Lowe's: 100 LED white lights for $4!! We really stocked up at our house is now the brightest of our neighbors with over 4000 lights!

Anywho... back to the main event of today's post: Chicken Lettuce Wraps

I make these chicken lettuce wraps for lunch on a monthly basis. They are easy to prepare in advance, and fast to heat up while I'm at work. I'm also not the biggest salad person... I have to be in the right mood for a hearty salad, and sometimes I just don't want to be bothered with making it. And don't salads always taste better when someone else prepares it for you?? {I can't be the only one who thinks that}

Lettuce wraps on the other hand.... it's almost like a taco. An Asian, inspired healthy taco in a lettuce wrap instead of a tortilla. And eating tacos makes me way more excited for lunch than a salad does #justsaying.

I've also taken a hand at growing lettuce in our garden this fall. I planted a bunch of romaine and butter lettuce, not thinking it would take off as easily as it did, but my garden is getting a little out of control! So. Many. Leafy Greens.  So far,  lettuce wraps have been my go-to meal, and it is a great way for me to eat through my garden produce more regularly.

This recipe is also a great base recipe for anything! You could easily add more bulk to this meal with incorporating your favorite veggies, cauliflower rice, or serve with sticky white rice if you feel like you need a little more carbohydrate in your meal.

Chicken Lettuce Wraps
A fast, simple, and flavorful meal idea. Feel free to bulk up the dish with extra vegetables, or serve with cauliflower rice or white sticky rice.
  • 1/4 cup low sodium soy sauce
  • 1/2 cup ponzu sauce
  • 1 Tablespoon sriracha
  • 2 Tablespoons sambal oelek ground chili paste
  • 5 dashes fish sauce
  • 2 Tablespoons honey
  • 1 Tablespoon dark soy sauce
  • 3 pounds ground chicken
  • 3 inch piece ginger, diced
  • 3 teaspoons sesame oil
  • 1 bunch green onions, diced
  • 1 head butter lettuce
1. Combine the first 7 ingredients in a small bowl and whisk to combine. Set aside.2. In a large skillet, heat sesame oil over medium heat. Working in 3 batches, brown the ground chicken. Use 1 teaspoon sesame oil per batch.3. In the remaining oil, saute the ginger for 2 minutes, then add in the cooked ground chicken.4. Pour the sauce over the chicken mixture and stir to combine. 5. Serve with butter lettuce and enjoy!
