Hope everyone is going strong in the Whole30! With the 30 days coming to a fast end for me, I wanted to talk about breakfast. Breakfasts during the Whole30 can be difficult in the creativity side of things and also lacking in variety. As anyone who has attempted the Whole30 before, eggs can get old really quickly. And it’s a double whammy when the Whole30 guidelines even recommend not making any waffles/pancakes with Whole30 approved ingredients... For real though: these past few days, I have been craving some paleo waffles. Not normal wheat flour filled waffles... just some unrefined ingredient waffles {but I’ll save those for another day}.

In my quest for increasing by breakfast variety, I went for making my own Acai Bowls.

If you’ve never heard of or had an acai bowl before, they are basically a SUPER thick smoothie that you can eat with a spoon and whatever million toppings you would like. It also get’s its name from the acai berry that is blended into the smoothie (basically like a frozen blueberry puree). I got this brand of acai berry packets from the freezer section of my local Publix. {as always, check your ingredients to ensure there is no sugar added.}

I blended that together with more frozen fruit and my “secret” ingredient –> Avocado! You would never know by the taste that avocado is in the smoothie, but the avocado really helps add to the velvety smooth texture. Contrast that with some crunchy toppings. I used coconut flakes and cacao nibs that I already had on hand, but use whatever you enjoy!                                              

I call this my “winter” version, since all the fruit I used is frozen. But I bet this would be even better topped with fresh berries from the summer farmers markets.          

This is a simple base “recipe” that you can definitely run with creatively and mix up in a million different ways to get a great variety of flavors. Mix and match with your own favorite fruits and toppings.

Winter Acai Bowl

Ingredients        

  • 1/4 cup almond milk unsweetened
  • 1/2 avocado
  • 1/4 cup blueberries frozen
  • 1 package unsweetened acai berry
  • 1 banana frozen                    
  • 1 Tablespoon almond butter optional
  • 1 Tablespoon unsweetened coconut flakes optional
  • 1 Tablespoon cacao nibs optional

Directions

  1. Layer the first 5 ingredients into a high speed blender in the order listed.            
  2. Start by blending on low, and slowly increase the speed to medium high.            

  3. Blend on medium to medium high until you have a smooth, but thick texture. *At this point, depending on your blender, you may need to add 1-2 additional Tablespoons of almond milk to get it evenly smooth.        

  4. Pour smoothie into a bowl and drizzle with almond butter. Finish with your choice of crunchy toppings. I used coconut flakes and cocoa nibs :)
